For the longest time, I thought I hated falafel. Lucky for me, Vegan with a Vengeance has a super falafel recipe that inspired me to re-think my preferences. I mean, there’s nothing in it that isn’t fantastic in it’s own right! Chickpeas? Check. Copious amounts of onion and garlic? Check. Parsley and cumin? Check. It’s official: homemade falafel is the only way to go. Stuffed into fresh homemade pita (from the Bread Baker’s Apprentice – Peter Reinhart) with tomatoes and cucumber, and drizzled with the Tahini Dressing straight out of VwaV, this was seriously good.
